    Two ways to do this come to mind: www.Booki.cc (software especially for collaboratively writing open-content books), and www.Sophie2.org (much larger software, can handle multimedia creations and includes four software pieces: server, author, reader, applet).

    I think this could make a big difference for helping me stay involved in the course and seeing what's going on. If I can participate largely from my email inbox, then I will participate more. I just realized that I can use FeedMyInbox.com to patch together the sending mechanism, and I don't know any way to hack together a "respond to forum via email" function. CoActivate.org listserves/forums do this nicely.
